Led by Head of Food, Lee McMullen, our kitchens are driven by a clear vision: to deliver high-quality, flavour-led dishes that celebrate the very best of local produce. Lee oversees menu development, supplier partnerships, and operational standards across our inns, ensuring consistency, creativity and excellence in every dish.

Bringing a wealth of experience
Bringing a wealth of experience from leading UK pub groups, including senior roles at Urban Pubs & Bars and Hippo Inns, Lee has a strong track record in menu innovation, concept development, and delivering standout food offerings. Since relocating to the Isle of Man, he has championed collaboration with local producers, with highlights including the use of Okell’s Smoked Porter smoked salmon across a range of dishes.
